The traditional breakfast in bed goes without saying, and we’re sure mom can already anticipate that it’s going to happen. So why not surprise her with breakfast that is a little different. We have put together 3 easy-peasy recipes for a magical breakfast experience.
The starter: Fruit Salad with Cinnamon Honey Drizzle.
• To make the drizzle: Melt a teaspoon of unsalted butter in a sauce pan, add cinnamon, lemon juice, and 3 teaspoons of honey. Mix these ingredients together until they have combined well. Let cool for a while then stir in 2 tablespoons of heavy cream. Stir continuously and bring to the boil for 30 seconds. Turn off the heat and you’re done.
Chop your desired fruit into a bowl and drizzle the cooled cinnamon honey drizzle over it.
Main meal: Ham and Cheese Croissants with Honey & Mustard Glaze and Poppy Seeds.
• Preheat the oven to 150° C. Cut 2 croissants lengthwise and put a slice of mozzarella cheese, 3 slices of good quality ham and another slice of mozzarella cheese in the croissants. Sprinkle salt and pepper to taste. Then mix half a teaspoon of Dijon mustard with a teaspoon of honey. Brush the sauce over the top of the croissants and sprinkle with poppy seeds. Place the croissants in the oven for 5 minutes.
The croissants are ready to serve.
Beverage: Cranberry Iced Green Tea with Fruit-Filled Ice Cubes.
• Fruit cubes: These must be prepared the night before. Rinse and add raspberries and blueberries to an empty ice tray and fill with water. Place in the freezer.
• Iced tea: Brew 2 green tea teabags. Once brewed, removed the tea bags and mix 2 glasses of cold water with the tea. Pour a glass of cranberry juice into a glass and add the fruit cubes. Pour the now-chilled tea into the jug and mix.
If desired, add sugar.
